This extra virgin olive oil comes from a twenty four acre estate near Florence Arizona. They harvest the mission, sevilla, manzanilla, and kalamata olives every year in late Septemeber and early October. Within hours, they sort the olives, and put them into the press. This oil comes from the first press, creating some of the richest and freshest olive oil you have ever tasted. This olive oil is never heated, and is unfiltered. When the sun hits the bottle it starts to glow.
Every year they have just a little bit left over, and we were luck enough to get some of the best olive around.
